The research is not over

The soil and climatic conditions of the Aeolian Islands and in particular of our vineyards, both characteristic of Mediterranean and somewhat continental latitudes, due to the strong winds that blow and therefore to the sensational temperature range between day and night, convinced us to start the training of a sacred and difficult variety such as Pinot Noir, on one of the highest terraces of the estate, of course alberello-trained.

We have chosen to use the small quantity available for a different wine, a refermented in bottle, funny and tasty, that we dedicate to the underwater world of Marsili, the largest volcano in Europe, also part of the Aeolian island arc.

Under the sea, darling it’s better

The glass lights up with pink light and light effervescence, giving at first smell the images of a journey in a territory that is still unknown, yet existing in the memory. It is an out of the box wine, bold yet also the result of the infinite passion for the search for quality in the expression of the potential of the magical Aeolian terroir.

Bottled before the end of the spontaneous alcoholic fermentation that takes place in a steel tank
